
I really like these pans. They are durable, well constructed and easy to use and clean. They don't burn so I didn't oil or flour them, I just cut the parchment to fit the bottom and they were ready to go. I used them to make a birthday cake (Italian cream) recently and it turned out great! For even layers, I recommend adding no more than 1 cup of batter to each pan and baking them no longer than 18 minutes. I first set them to 16 minutes and they were a little understated. 18 minutes was the perfect time. I let my brownies cool in the pans for 5 minutes and then placed them on wire racks to cool completely. Handle with care to avoid breaking the hot cakes when removing from the pan. Also, 4 layers is the perfect number for the right height. I used 5 layers and my cake turned out a little bigger than I expected. You can't beat these time-saving forms. It took longer to knead the cake than to bake the layers themselves. I bought 2 sets but may be able to buy more as gifts for other bakers in my life.
