Update 09/10/07: Please check the Shun Classic U2 (Ultimate Utility) knife before you buy this knife separately. You may like it more. I believe if you are serious about cooking you should have great utensils and great knives. I finally got up and got some great knives. For those who haven't heard the hype, Shun is one of the most respected knife brands in the world. Check them out online at kershawknives.com. One of the standout features across the line is those cool D-grips that fit your hand better. Every Shun Classic knife is made in both right- and left-handed versions (chefsresource.com for left-handed people). The steel used for the blades is harder than most other knives. The knives are VERY sharp. One thing to note about Asian knives is that they need to be sharpened at a different angle, 16-18 degrees versus 20 degrees for German knives. Shun Steel takes the guesswork out of finding the right angle as the flat edge is on one side of the metal disc under the handle. Knife for tomatoes. I haven't eaten tomatoes for a week while waiting for this knife. . I'm glad I waited. I used to cut tomatoes with a steak knife and this is so much better! I think this knife is a general purpose Jacobs knife. I'm not razor sharp enough to tell the difference between serrations and shells, but I know I love this knife. In Alton Brown's Gear he prefers scallops, but he didn't say why. This is an expensive but lifetime investment. I encourage you to visit stores and feel the knives in your hand to make sure you are comfortable with them. For more information on Shun, visit Elton Brown's website.
