Yes, you must wash them by hand. Yes, they will rust if you leave them in contact with water for a long time. But if you're a dessert perfectionist who loves to revel in your superb pastry, they're worth it. Light-colored metal cooks more evenly than dark-colored pans. I use the Individual Lemon Cheesecakes recipe from George Geary's Cheesecake Bible. I let the cheesecakes cool in the pans on the cooling racks for 2 hours before taking them out and they turn out well. I hand wash them (no soaking), hand dry them and dry them in a heated oven for extra action.
