Review on πŸ– Dexter-Russell 6-Inch Butcher Knife: A Precision Tool for Expert Meat Preparation by Morgan Davis

Revainrating 5 out of 5

Think of it as an outdoor knife, not a kitchen knife.

I received it as a belt/hunting knife. He does an excellent job with this role. It came out nice and sharp, had good blade geometry, and is actually a bit thicker than an old 7" hickory butcher knife (about half a millimeter). The steel itself seems quite strong, I don't overuse knives although it can be clubbed well. (Actually, the geometry of the blade isn't very good, but he can handle it). Is it better than old hickory? I don't know, it's definitely sharper and has a much better fit and finish. but it's a totally flat grind and the old hickory is a reciprocating grind and because it's so sharp it has a much thinner edge. If you want a serviceable knife straight out of the box and don't plan on overusing it, then go for it. On the downside, this knife doesn't look pretty when you get it, but I just put a coat of stain on the handle and a forced patina (with mustard) on the blade and it looks like an antique. .
