
It's hard to explain. All was going well (batter ready, muffin cases filled) until I put the pan in the oven. The weight of the dough made the brittle, flexible silicone too heavy and wobbly. It was like picking up a wet towel and expecting it to remain hard and angular. It will fall down. After several attempts and losing the dough and mess, I had a stroke of genius and used our pizza spatula to pick up the baking sheet and pop it in the oven. I used the same technique to remove the pan, although it's easier to manage after baking. On the plus side, the cupcakes turned out very easy and clean - no baking pans required. I'm a big fan of kitchen silicone and will continue to use these pans, but just fair warning: you may need to purchase a pizza turner.
