An excellent sharpening system for those who know how to use it.

of this item. Used a year ago. Bought now if I can afford it. I love the fact that you can use it with water or oil. I didn't want mineral oil in the kitchen. I love good kitchen knives. Knives are not meant to cut through flesh, they are meant to cut. You should not smash tomatoes and avocados. Sharp knives produce less onion juice spatter when cutting. I spent good money on kitchen knives but didn't get all I owed because I didn't like sharpening them with my old stone. It was too small to safely handle when sharpening a long knife. With this system, the stone stays where you put it, allowing me to focus on controlling the angle as I slide my blade across the stone. That works great. Now I had to make sure that my knives are always very sharp. Cheap sharpeners will damage your knives and give you a terrible blade. This stone cost me extra. I like good sharp knives and I will not pay a professional to sharpen them.
