Exquisite chef's knife made from genuine 67-ply VG10 Damascus, 8 " pronounced curve on blade

I love the best knife for my culinary needs. This is an excellent 8 inch chef's knife that uses VG10 (SS) stainless steel to create a thin knife with hard edges. It has a stronger and thicker Pakka wood handle than most knives of this size. I'm pretty sure it uses a full shank design. The blade of the knife was hardened to a Rockwell hardness of 60 Β± 2. That's pretty high. With high-quality VG10 steel and a special forging process, the Rockwell hardness reaches 60 HRC. Typically, premium steels have a hardness in the 59-64 Rockwell range, which allows the knife to be sharpened, remains flexible but not brittle, and also holds the edge well for longevity. First class, top notch! The illustrations of the knives (page 3 outside, page 4 close-up) emphasize the excellent design of the real damascus type. Some newer knives I've seen use a "simulated" damascus pattern that's burned or laser etched into the steel. I avoid that. It uses real laminated damascus steel made from 67 layers of high quality VG10 stainless steel. This allows the blade to be thinner, have excellent strength, and retain some flexibility. This knife also has a chiseled surface to make it easier to hone the slice. I noticed that the sharp edge has a more pronounced curvature than most chef's knives I've reviewed. I liked the "shakes" knife. The blade is very sharp, the knife offers a comfortable chef's pinch grip and excellent balance. I highly recommend this Nineponder 8" Professional Damascus Chef's Knife.
