My kitchen is not a kitchen without two tools: a good chef's knife and a good paring knife. These are my favorite paring knives and I use this style and brand - and in fact the same 3 paring knives! - Literally 3 decades (my mom bought me some when I left home). They stay sharp forever. They feel good in the hand and are the right size/shape for safe and efficient cleaning (two-handed peeling, trimming and cutting). They last forever. The only reason I bought new ones is because I lost mine over time to my ex-husband's chef, a friend who didn't have decent knives around the house (so I stashed one in there), and to disorganized ones Teens Losing Things. The only downside is that the handles will lose their luster and discolor/oxidize if washed in the dishwasher, so HAND WASH ONLY. Buy a pair and you'll probably never have to buy paring knives again.
