The Perfect Boning Knife
I chose this knife because it received the highest rating from America's Test Kitchen and because its design is better than any I've seen. To be honest this is more of a knife than I probably need and there are cheaper knives out there that can do the job almost as well but in my opinion this one will make the job easier than any other. It's just flexible enough to go around bones. A fine sharp edge just below the handle makes it easier to work with large bones. And it's an item to be proud and happy to have in your kitchen.
