Works great; I used it to measure candy (cooking English toffee at 290F) , butter for frying (350F), assorted foods (140-195F), water temp for yeast, and out of curiosity, measuring the melting temperature of snow in a local river (55F, which is a lot warmer than you think when you get in it. ) The measurement is definitely not instantaneous - probably set in about 6 seconds, which I think limits its use in confectionery (for English toffee, it's risky to reach 290F as the candy changes temperature rapidly in this state with almost no water !), but it's better than the old dial thermometer. My biggest concern is the fear of dropping it into something that will melt (like candy or butter) even though it hasn't happened yet. On Revane they are very cheap by volume, or in a pinch you can get them from your local grocery/drug store (size LR44 = SR44 = 357 = L1154. lots of reasonable substitutions).
