Exquisite Damascus hatchet!

I'm not a chef by any means, but I really enjoy cooking and for me cooking is entertainment and what I enjoy doing. For several years I used an old Chinese hatchet that needed sharpening badly and had a few dents in the blade. It has always been an ordinary cleaver, but I enjoyed using it for its size and of course its cutting ability. I also have a complete set of respectable knives that includes the usual set of knives in a wooden block set. This new damascus cleaver from Jaco Master is light years ahead of my old cleaver in every way, construction, looks, sharpness and overall quality. I have never owned a damask knife and I have to say that I am a bit overwhelmed by the look of the knife. Appearance is not the decisive factor, but this knife can keep up in terms of performance. First of all, it is very sharp out of the box, which for me is a good first step as a quality feature. The blade has a full shank which means that the entire knife is made from a single piece of metal and the handle is very well finished and completes the look of the knife. The centerpiece is a colored design motif that accentuates the look of the handle and gives it a nice touch of class. The overall size and weight of the knife is well balanced for me and it feels really good in my hands, very solid and strong. When in use, it effortlessly slices through vegetables like a hot knife through butter. So far I've only cut raw bone-in and boneless chicken, and again the knife did the job with ease. If anything happens with its use for slicing steak, ribs or other meats I will update the review. Most of the time I just let my other knives air dry but this knife does dry out with water stains on it so I now make it a habit to dry it completely with a dry towel to avoid this, no big deal but worth mentioning . All in all one of the best knives I've ever had and highly recommended.
