When I unpacked this beautiful little cookware, I had a renewed respect for things made in China. This cookware stays non-stick multiple times without the use of oil. After that you need a light oil. The smooth, durable surface makes cleaning quicker and easier than most other cookware. Also, the fast heat conduction of these durable Gotham pots and pans is amazing, so definitely a good buy. UPDATE: I was recently boiling some water in a square pot when the phone rang. I got into a conversation and forgot my burner was on. The water boiled off and the empty pot sat on high heat for almost an hour! I took the pan off the stove and let it cool. Surprisingly, the floor was not damaged. In fact, it looked shiny and brand new! I don't know what miracle metal Gotham uses, but a normal pot would have been destroyed. (I later noticed that unlike other pans and pots, the bottom of the square pan has a reinforced metal plate. This may explain its survival in high heat). key below, or post a comment. Many Thanks).
