I bought these to see if I could get nicer cuts of some herbs that bruise when cut with a knife. I used regular scissors and was happy with the results so this item looked like it would speed things up. Well it works as I would expect with herbs and even leafy greens if you want a thin slice. I even do a cross cut on large sheets, first 3/4 of the sheet and then across for very small pieces. The only thing I wish is for the steel to be stiffer so more items can be handled without the risk of the blades bending. Perhaps they will develop a larger model, albeit not a manual one, to reduce bulk.
