Great knife, very sharp, takes some getting used to.

I like having a knife like a chef in Almazan's kitchen. The knife takes some getting used to; It's bulky compared to my favorite knife, the 5.5 inch chef's knife. This knife comes well packaged and oiled to prevent rust. The knife is very sharp out of the box. It feels good in the hand and the weight makes it feel like you're holding something substantial. I have only two minuses: first, the blackish metal on the top is simply painted, it comes off when cleaning. I first noticed this when I washed off the oil before using it for the first time. It will then peel off more in subsequent washes which isn't really an issue for usability, but if you buy it for looks it will change with use. The second downside is chopping things like onions or cheese. If you're familiar with Santouku knives, they have small slots on the knife so nothing sticks to the blade when you cut, like a cheese knife. But at the same time, slick, wet things stick to the knife and don't stay in good condition when you're trying to make cuts. This may also be a sign of my ignorance as there may be ways to use the knife that can prevent this, but I haven't found it yet. Otherwise I still give it 4 stars because it looks exactly like a diamond blade but at a fraction of the cost. Their website sells these knives for 10x! Even at half the price, this knife is 5 times cheaper than the Almazan website.
