I have been using the sous vide method since 2006 and have made over 700 burgers using this cooking method. There seems to be a lot of hamburgers, but I use this method for gig catering to deliver burgers for events. I have over 100 stainless steel rings and I have to tell you that sous la vide rings are a game changer for the following reasons. The stainless steel rings I have for hamburgers come in 4, 5, 6 inches and a crazy 8 inch for parties. Sous la vide settled on the perfect size of 4.25 inches, which allows for shrinkage, meaning they fit perfectly on the bun. My 4" and 5" stainless steel didn't fit perfectly on the bun after toasting. Let's talk. about usability. With stainless steel, I had to spray cooking spray inside the mold to prevent sticking. This is not necessary with these forms as they slide out immediately. If you're not using molds, it's recommended that you freeze them and then vacuum to hold their shape. Yes, I know a lot about these problems. I'm the admin of the 7-Food FB group and this topic comes up a lot. Because the hamburgers don't stick to the molds, cleaning is very quick. and easy compared to other forms. I already have about 30 of these and lost two to my dog. He thinks they chew toys. I had two molds on the counter that had not been cleaned. This is a 110 lb dog and I have to say they held up pretty well considering he chewed them for about 5 minutes until I saw what he was doing. very hard, and after my dog went into town there was only light chew marks and chips on it. Anyway, I plan to buy many more.
