I was concerned that the spool might be too loose as the inspection said the yolk had gone through. I don't understand how this is possible. Some of my eggs are harder to separate than others. Some proteins just seem to ooze out, and some I have to cut with a sharp paring knife. The egg whites that thick are also difficult to separate with other methods, even with fingers, so I decided to give it a try. The wire is very polished, so much so that at first I thought it was chrome and not stainless steel. With such a high level of polishing, egg whites won't stick at all. I've never used an egg separator before, but I think I'll use this one from now on.
