I bought disposable rectangular pans to plan meals ahead. I double or triple the amount of a recipe like goulash, lasagna, pot roast, etc. and fill the molds, cover with lids and label for future meals. Some just need to be reheated, while others, like the meatloaf, need to be baked before eating. I write on the envelope what the contents are, the date of creation and how it should be prepared. Soon I will have a good selection of dishes for those evenings when I don't have time to cook a full meal or just don't feel like cooking.
