Slice n Dice: Cutlery and Knife Accessories

Good knives should be used daily or kept dry. This is a commercial knife with a sharp blade perfect for flounder and fluke.

Good knife - kitchen & tableware

I love knives with carbon blades, they stay very sharp, this one! The handle is somehow sucky, feels somehow awkward in the hand, the blade is flexible.

The only fillet knife I would buy!

I have used this knife for over 30 years. I just bought a new one because I almost wore out my last one. Has great flexibility. Makes you feel when you're wasting your fillets. Easy to sharpen.

Deckhand's Choice Best Cutlery & Knife Accessories

I'm a sailor on a big fishing boat. Have used this model on a filleting table (leeches, porgs, sea bass, etc.) for many years. The only brand I use. The blade is covered with patina, but can be sharpened at any time. The best in the business.

Makes fish skinning easier

I have several Dexter knives. I use this knife for skinning store bought whole or peeled fish. Care should be taken to clean and dry it immediately after use. The flexibility of the blade allows for very tight skin removal. It holds the blade well and is easy to sharpen. I use a Lansky dual blade sharpener that cuts razor sharp in about 15 seconds.

Classic filet knife

A utility knife that works. Most guides I have fish over 60 with use this knife or a very similar and somewhat rough stone. They sharpen often. The high carbon steel blade will rust but is also easy to sharpen and hard enough yet bends enough. A wooden handle works better than a plastic one coated with fish slime, but fish slime always wins in the end.
