I am a big fan of the 6 inch diamond sharpener. I have several smaller compact DMT sharpeners but this one lives between the kitchen and the workshop. Wet or dry, it delivers. It literally only takes 5-6 draws with a blade in good condition to keep it sharp. I tend to sharpen each knife after each use. It takes less than 20 seconds to maintain the benefit. , I have tried different grinding systems. In my opinion these DMT stones really shine in the low to medium grit range. I've tried water stones and they work well, unfortunately lower grit stones tend to be softer and they scratch a lot (get a gouge from a chisel or plane). Higher 3000+ grit waterstones tend to be very hard and have far less bulge, so I recommend using DMT stones to finish your blade and then finishing with a waterstone with extra fine grain. to get a terribly sharp chisel or…
