These knives are impressively sharp and I really like them. I only gave them 4 stars for 2 reasons. #1, the blades are at least 2 inches shorter than my regular steel chef and santuku knives which is disappointing, the paring knife is actually slightly larger. #2, they don't come with protective cases so they can't be stored in a kitchen drawer. This knife is very sharp! It cuts beautifully and I enjoy using it. I feel like a professional chef every time I use it. I've used it on veggies, even carrots, meat, potatoes, and it does a great job with everything. I'd love to use it for cleaning supplies too, but even if it works, it makes the mold difficult. My husband did all the research and made sure we choose knives that have amazing durability, won't break the bank and are effective. We bought them a few months ago and they worked as expected.
