This little skillet is designed for one egg, but I've successfully whisked two eggs in this cute little thing. By mixing very gently, I was able to mix two eggs with a silicone spatula. (All the other spatulas were too big.) I put some butter in the pan and slowly beat the eggs. The pan is so easy to clean that it is not a problem. Update: I didn't use a high enough temperature at first, but after getting used to it by making a few more breakfasts with it, the higher temperature makes it easier to stir the eggs because they cook faster.
