Stainless steel pots are best suited for the high heat required for oil or broth fondue. This pan gets hot very quickly and is great for stock (I didn't make butter) but I thought it would be a bit big for cheese or chocolate fondue. After purchasing 2 7 inch oval soup bowls, I easily solved the problem and started using this pot much more efficiently. The 7" bowls fit comfortably in the center of the splash guard (6" diameter) making the pot a functional steamer. I usually boil the broth in a saucepan, cook the cheese in a steamer on the stovetop, and then transfer it to a preheated bowl on the saucepan. Remove the bowl and move on to the next dish - no reheating or cleaning of the fondue container required. I cook chocolate the same way using a second bowl (hot water in a saucepan). The chocolate stays smooth and warm in the bowl and keeps very well for a long time, leftover chocolate can be refrigerated in the bowl and cleaning is very easy. I am satisfied with the purchase and can only recommend this jug.
