Review on πŸ”ͺ Misono Swedish Carbon Steel Gyuto Knife by Sohini Ledesma

Revainrating 3 out of 5

Fantastic knife with one glaring flaw.

Good knife. good steel. The slightly asymmetrical cut is ideal for slicing, so the slices flake off to the right without the knife swinging to the left like a yanagiba. A glaring flaw on this knife is the engraving of the dragon logo. Since it's a high carbon steel (ignore the other reviews deducting stars for rusting if mishandled) you'll need to wipe it down with a towel after each use. The engraving of the dragon is etched so deeply that when wiping, the towel will cling to it and hold water that requires a second and third wipe to dry. It might seem like a small thing and it's kind of a consideration of how good everything else is about this knife, but the manufacturer really should have used it and tested the etched design before releasing it. ETA: You can get the same knife without the etching. here > https://www.amazon.com/Misono-Professional-Sweden-No-113-Japanese/dp/B06XPVZZJZ/ref=sr_1_1?dchild=1&keywords=B06XPVZZJZ&qid=1586634082&s=kitchen&sr=8-1 I would agree with one.
