Much sharper than a stainless steel knife

Sharpening this knife is like sharpening an old German razor, also made of carbon steel. As others have pointed out, the blade is much sharper than any knife in widespread use.

Excellent knife - Gyutou Knives

What a wonderful beautiful knife, easy to use, easy to sharpen, keeps sharp well. Yes, it can and will patina easily, but I'm fine with that. I recommend this knife but it doesn't require much maintenance.

Incredibly sharp.

ATTENTION: Scary photo! I'm just starting to learn how to cook and the first thing you need to learn is how to properly use a chef's knife. And I firmly believe that I buy the best tools I can afford for every job. This knife is so sharp I didn't even feel the cut. I was so surprised to see what happened. It's like a scalpel! So now I'm going to train MUCH slower in the wheelhouse. I have never used such a fine knife.

Fantastic knife with one glaring flaw.

Good knife. good steel. The slightly asymmetrical cut is ideal for slicing, so the slices flake off to the right without the knife swinging to the left like a yanagiba. A glaring flaw on this knife is the engraving of the dragon logo. Since it's a high carbon steel (ignore the other reviews deducting stars for rusting if mishandled) you'll need to wipe it down with a towel after each use. The engraving of the dragon is etched so deeply that when wiping, the towel will cling to it and hold water

Strong, holds an edge well and is easy to sharpen. I'm a home cook whose enthusiast so take what I say with a grain of salt. I'm not a fan of the profile as it lends itself to butt cutting or drawing rather than grinding or other methods. I'm right handed so it's actually easier to sharpen than 50/50 blades.
