Review on Ultimate Precision: Chef’sChoice 290 AngleSelect Hybrid Knife Sharpener – 15 & 20-Degree Diamond Hone, 3-Stage, Black by Brian Buck

Revainrating 5 out of 5

I was ready to throw out some of my knives but now they have never been this sharp before

PROS -15 and 20 degree angles for 2 different knife styles The sharpest knives I've ever had for 10 cons - seems a bit pricey for the $60 I paid. I have used other knife sharpeners and thought I could make my knives sharper, it has made some of my knives sharper than I have ever seen in the 10 years I have had them. It's hard to describe how keen some of them have gotten. I think the best description I can give is that for the past 10 years my knives have felt like I'm cutting something, I've been able to get 2 of my knives to do it so hard it didn't feel like if I cut them, they went through my tomatoes like air, I've never had this experience before. YMMV The only thing I don't like about this product is the price, I was hesitating between 5 or 4 stars but the sharpness of my knives put me back in the 5 star category. PS The process I used to sharpen knives was so tedious that I was willing to throw them away, had to slowly pull them through the sharpener until I heard a change in sound. When I heard a change in the sound, I left it there until the sound returned to how the rest of the knife sounded when it went through the sharpener. I repeated this as many times as needed until I put the knife through the sharpener and didn't get the entire length of the blade sounding the same. I now have 2 knives that go through things so well it looks like they go through air.
