I've been a chef for 35 years (still working) and have always wanted one of the Asian blades but their handles didn't suit me so I made a compromise and bought a MAC MTH-80 which I really like. When I saw a Zelite with a European style handle but with a 12* Asian blade per side with a big rocker I thought it would fit. That. The knife is well balanced and the rocker on the blade makes it very quick for slicing and dicing. The price was great on Revain Day too. This is the goalkeeper. The etching on the blade is very light and I would have preferred it to be more visible if other chefs saw me doing it. Better than my Forestner but I still love my MAC MTH-80. To be continued --- Well after 3 years of ownership and daily use, should I say this has become my favorite blade of all time? Holds an extreme edge very well, is balanced and the right weight so my wrist doesn't get tired after hours of use, and the damn thing is pretty and unique enough to draw attention, especially when I'm working at a trade show in front of guests .
