Given the size of this unit, I expected better performance. My main complaint is that even though the cooktop's glass top is large, the actual induction coil is still only about 5-6 inches in diameter. When cooking in stainless steel with an aluminum core this isn't as much of a problem as it conducts heat quickly across the entire cooking surface, but when cooking in cast iron cookware the center is much hotter than the edges, so more than one steak/filet is cooked it can suddenly become somehow out of the question. While this is better than most portable induction cooktops (which coils are only about 4 inches in diameter), I expected more from something that costs 3-6 times more. It's great for cooking and very fast: cooks in about 2 minutes compared to 4.5 minutes on my gas stove. The base of the teapot was 6 inches wide. _ 4 liters of water boils in about 5 minutes compared to 9 minutes on my gas stove. The bottom of the pan was 8 inches wide. Now for the interesting result: _ 12 cups of water to a quick boil in 17 minutes 45 seconds compared to 14 minutes 45 seconds on my gas stove. The bottom of the pan was 10 inches. Just to make sure I wasn't going crazy, I repeated the test and got similar results a second time. So it seems that its performance is highly dependent on the diameter of the bottom of the cookware used. Purpose of use. In general, this is a worthy device. The way the glass is attached allows for the installation of large pots and pans. The dial is great for leveling. When used with a thermometer it is fairly accurate and effective within +/- 10 degrees. That's probably fine for most people, but I was specifically looking for something that would work with my 12" cast iron. I'm considering getting the Vollrath Mirage Pro as it says it has a larger telecoil. Finally, it's incredibly well built - definitely commercial quality. The rubber feet have a slight adjustment for leveling. It can definitely handle more heat than cheaper devices before automatically shutting down. Actually. I have not yet reached this mark with a cast iron pan.
