This cheese knife has two positions. You squeeze your legs together to remove the wire. With the wire removed you can insert a roll bar into one of the two holes on each leg. Then squeeze the legs together and replace the wire. This will hold the roller bar in place. That's the problem. The top holes place the wire too close to the roller bar to cut through the cheese. (I use a block of sharp cheddar cheese.) The bottom holes cut the cheese too thick. I would make the top holes a little farther from the roller for a thin disc. Then I made an extra hole between them so I have three holes on each side. This would give me a choice of three cutting positions. Maybe a softer cheese would be easier to slice in a thinner position? I hope the above is clear. Many Thanks.
