Many years ago I bought a Lansky sharpening set and settled on whetstones. I'm not sure Diamond was an option at the time. Although it was an amazing product and really the only way to sharpen knives these days, there was always a problem that changing the blade angle on an old knife or a knife I refurbished was very time consuming. . The supplied rough stone works well with softer steels such as most Finnish made puukko etc. I think my knife collection has more to do with harder steels. So if you're going to use the product on tougher stainless steel like Cold Steel Voyager etc, it's a labor of love. This works, but takes a lot of time. Lansky has an answer. The coarse diamond sharpening stone is AWESOME as it instantly sets the edge to the right angle. Of course, I don't need to use it often because I use my kit a lot to keep my knives in tip-top shape, but when I get a new knife, or an old one that hasn't been sharpened for years, it needs a major overhaul. The diamond version of Lansky's sharpener does a great job and works fast. You will be amazed at how quickly the edge takes shape. I don't see any difference in quality between a regular sharpening stone and a diamond type; but the speed is phenomenal! If you have one or more knives made from heavier steel, then this is a MUST for your sharpening arsenal.
