I've been using this for a few weeks now and enjoy making seltzer. I have a CO2 tank and set it to 40psi. I put a few teaspoons of lime juice in a 2 liter bottle and fill it about 3 inches from the top with chilled filtered water. I squeeze the bottle to raise the water level to the top and screw the stainless steel cap on tight. I then use the CO2 ball valve connector I usually use on my beer keg and plug it in. After a second, the balloon is filled with CO2. Then I shake the bottle well for about 30 seconds or until I feel it's soft. Then pump up again. Shake again and add CO2 again, shake well one last time and then I pour into 3 18oz glass juice bottles for storage. After reading more about the challenges of reusing 2 liter bottles and washout chemicals, I'm feeling better about storage. in glass bottles. I'm not too worried about 2 minutes of water in a 2 liter bottle that's carbonated. I find top-fill glass bottles hold a satisfying amount of fizz, and 18 ounces is a good amount to open at once.
