Waited for review until I tried it twice. The maker almost sends instructions both in the box and via email, and maybe it's for the better or else the vital instructions will be ignored by regular pot users. Don't turn the heat on above medium, and in fact low to medium-low will work. Give it a few minutes to warm up and you won't need any oil. Use a soft pancake spatula and hand wash with mild soap when completely cool. Dry the towel and put it away so it doesn't touch other pans to avoid scratching it. These are the basics. Other than that, this is by far the best pancake pan I've ever used. It cooked perfectly evenly to the brim on a burner big enough to cover the bottom of the pan, never used oil and so all the GF cakes I've made have been the same size, evenly cooked, evenly browned and not greasy. This could possibly become a quirk! Can't wait to try it with pancakes and omelettes. But right now I don't let anyone use it. This is from a person who is usually afraid of cooking. This pan is worth its weight in gold. It's beautiful and high quality too.
