Perfect for sourdough baking!

I actually have 3 more Dutch Ovens. A HUGE one that belonged to my grandmother, a regular one that belonged to my mom and another regular one that I bought 20 years ago. This pot is absolutely the same quality as this one. I bought this dutch oven to bake sourdough in. I grew up on a ranch on the border of Mexico, Arizona and California. By the time I was 25 I had probably eaten more meals cooked in a cast iron skillet over a fire than most people would have eaten in a lifetime! But for those of you new to cast iron, there is one service you absolutely need. First, heat up your outdoor propane grill to maximum temperature. Using a paper towel, lightly grease the entire pot and lid, inside and out, with grease. Place it on the grill and close the lid. Allow to "boil” for 30 minutes. Remove pot and lid BE VERY CAREFUL. The pot gets very hot and heavy. To cool, place the pot and lid in a place where the hot pot will not burn. After about 30 minutes, repeat the oil and grill process. You have to do the coating and cooking 3 times. It's far better to make it outside than smoke and smell in the kitchen when you're making it in the oven. Do not wash your cast iron. Clean with a paper towel or washcloth, then wipe with a damp, clean cloth. Dry it off and then use a paper towel to apply a very thin layer of grease to the entire item, inside and out. Wipe again with a paper towel to remove excess coating. Shortening is good for everything, but vegetable oil is good too. Pictured is a crock I just bought as it's being heated up in my oven today before I put the bread dough in the crock and I've probably made 10-12 sourdough loaves in it since it arrived. Cast iron cookware is a good investment as it will last for several lifetimes with proper care. The Dutch oven is the perfect baking tool for baking bread.
