I love this set of two quarter inch baking sheets. They're well made and come with a fairly narrow grate that prevents pastries from sliding around, which is a big plus for me when it comes to cooling crackers, small biscuits and the like. Use one of these grates in your pot to keep the meat from dripping so it frys, not simmers, in the liquid. These racks are strong enough to hold a 7-10 pound piece of meat (I haven't tried anything heavier) off the bottom of the brining pan, which I do often and where it is desirable to have air circulating around the meat. Use these racks individually for small tasks or together for half sheet cooling. I have a very similar tin rack for refrigerating large batches of food and it has lasted at least five years. One caveat: these frames are chrome-plated and the finish won't withstand strong soap or the hot water of an automatic dishwasher. . So I bought new shelves.
