The highest quality carbon stainless steel knife, 66 folds of Damascus steel, full shaft and perfectly balanced

There is nothing wrong with this lifetime purchase. It's a bit heavy, 9.20 ounces. but meat, fish and vegetables are not available - "Santoku", a knife for free. This knife has a little more muscle which I wasn't expecting, it's more like a Deb knife but with a bigger blade, blade and versatility. (My Sabatier chef's knife weighs 8.25 ounces, my Deba knife weighs 8.75 ounces.) The blade is serrated to avoid pulling and is balanced with a full shaft and ergonomic handle for easy handling. This is a compact 7 inch knife that has become my favorite knife in the kitchen for up and down or pressure cutting. but this knife is good at everything. (and I have a lot of good knives!) It's as close to perfection as you can get. I love its razor sharp edge and ability to make precise cuts exactly how I want them. For example, New York strip steaks have a thick band of connective tissue down one side. After grilling, I can easily remove it from fine cuts. A piece of cake for this knife! I really enjoy thinly slicing the garlic and chopping the onion! It's geometrically perfect and I love using it every day!
