Possibly a sign of the times that the meat thermometer is programmed from the factory to read 'rare' beef as 140 degrees (F), while every cookbook I've read says "rare" - 125 degrees. I suspect the manufacturer just wants to err on the "safe" side with the meat temperature, but as a consumer you should take note; ignore the factory settings and enter your own temperature. I've only used it once, but it worked well and is relatively easy to understand. You can switch between Celsius and Fahrenheit.
