VARIOUS ATTRACTIVE Great for the kitchen and dining room

I noticed that there are two groups that buy these knives. A group buys knives based on reviews and price. Another group buys because the blades are high carbon and buyers understand that these knives represent an exceptional offering. I consistently stuck with the last group and bought a set of five knives and added the chef's knife as a separate item. The knives came in varying sharpness and texture, but all were sharp for cutting paper and usable as kitchen knives. The only knife that needed urgent attention was (of course) the slicer. There were three rough spots on the edge and it took me about an hour to fix the problem. I cut new 30 degree bevels (15+15) on all six blades and then cut 40 degree bevels (20+20) for the cutting edges with the Spyderco Sharpmaker. All blades are now razor sharp and cut smoothly along the entire length of the blade. At the end of the day, knives, planes anyway, stand on a stone and have a bevel of 30 degrees (15 + 15). The excellent first grinding of the boning knife and the quality of the paring knife are particularly convincing. I have no idea how many crappy paring knives I've used in my seventy year life, but it's definitely too many. The quality of the knives and the expected longevity justify the possibility of making and attaching handles made of precious wood or micarta. Appreciate buyers, you need these knives because of the price. Knife owners, you need these knives because they may be the best of them all, but the most expensive knives out there.
