I use this knife in the home and not in the professional kitchen and I couldn't be more impressed. I've been in the hospitality industry all my life and this is one of the best knives I've come across. I have used almost all brands of knives, both at home and in the shop, Shuns, Globals, Wüsthofs, Henckles etc and this particular Global is one of my favourites. With my chef's knife and this knife they cover 95% of my work in the kitchen. This is a great paring knife for slicing, but it's also good for chopping. Just note that this is not a chef's knife and should not be used as such. I will never use this knife to smash a chicken. However, if you want to effortlessly prepare vegetables, this is your knife.
