Messermeister Meridian Elite 9" Stealth Knife A 9" chef's knife feels like an extension of my body. It's sharp and lasts well, I only have to sharpen it at home 2-3 times a year. I use honing steel on it almost every time to keep it sharp longer. I have had a Meridian Elite for a number of years, my previous chef's knife was also a knife master, 10" Park Place. I bought this knife 15 years ago and used it in cooking school and worked in restaurants for several years. I still use it at home if I need a slightly larger chef's knife or for more complex tasks In any case, I would like to say that these are quality knives and I wholeheartedly recommend them.
