The Chef’s knife is the workhorse in every kitchen and is used for 90% of all your cutting tasks. The Messermeister Meridian Elité 8” Stealth Chef’s Knife has an industrial strength polyoxymethylene or “POM” handle. The hand forged Stealth blade is about 25% thinner and 10% lighter than our traditional chef’s knife. It has been ground to a thin profile to create a razor sharp edge. You can chop, slice, dice and mince your way through extended cutting tasks without fatigue. The Messermeister Meridian Elité knife collection defines tradition with a triple rivet, full-exposed tang handle. These knives are of the finest German stainless steel alloy and fitted with the most durable industrial strength, ergonomic handle in the world. Meridian Elité knives are handcrafted and polished one at a time using the same techniques that have been the hallmark of fine Solingen-made cutlery that have stood the test of time. The German 1.4116 high-carbon, stainless alloy blade resists stains and corrosion, exhibits toughness and durability, holds its edge retention, and is easy to re-sharpen to a razor-like edge. This knife line is one-piece, hot-drop hammer forged, which produces the strongest blade from heel to tip. The blades are heat treated and cooled to achieve a Rockwell of 57-58. The three-step, 15 degree “Elite” edge is hand stropped on a cloth wheel, creating the sharpest possible cutting surface on an edged tool.

If it's still 2021, don't plan on getting Cullensloop!

These knives are top notch. However, when I ordered the Kullenschliff, I received the package immediately. The box was correctly labeled, but the knife inside was a smaller 10-inch stealth knife. I immediately asked for a replacement and was promptly given one - SAME PROBLEM - no Kullenschliff, just a box labeled Kullenschliff, with a stealth knife inside. tells me that this is not a one-time bug. I'll try again, but don't expect different results. I checked their website and it says they don't

Excellent knife. Probably perfect for you!

Really good knife. The 10" is very well balanced and well weighted. I work in the kitchen and this knife is a good workhorse for both prep and line work. Takes a good edge. Holds a sharp edge well. I sharpen every week and a half or so with frequent honing. In a week and a half it's still slicing up a tomato with no problem. Maybe I'm just having a little obsessive-compulsive disorder because of my blades. I wish the knife had a little more belly, but I'll get used to it. I have the handle too…

The 9 inch stealth knife seems perfect!

Messermeister Meridian Elite 9" Stealth Knife A 9" chef's knife feels like an extension of my body. It's sharp and lasts well, I only have to sharpen it at home 2-3 times a year. I use honing steel on it almost every time to keep it sharp longer. I have had a Meridian Elite for a number of years, my previous chef's knife was also a knife master, 10" Park Place. Fine balance, nice edge, ideal for people with big hands.

I bought this knife partly because Sarah Moulton used it on her old PBS cookery show and also because I heard about Messermeister's collaboration with US cookery schools. Simply put, the knife lives up to the ad. I purchased the 10" Meridian Elite Stealth and can confirm that it was superbly sharp right out of the box. With regular hardening this kid holds up the sharpening well. Despite the relative thickness of the back, the 15 degree bevel runs through the itself toughest chopping jobs…
