Turns out I had a faulty Z limit switch on my Ender 3v2, hence the auto reset went off the nozzle, and limit switch pressed do not always snap into place/pressure. So much so, that sometimes I could hear the switch *click*, and sometimes it wouldn't even shut down. This means that I leveled the platform to a height and then when I started printing and it automatically returned to its original position before I started extruding, the nozzle was higher or lower than what I just leveled would have. I received these little switches and swapped them out in less than 5 minutes and it's been typing like a dream ever since! Highly recommended if you have problems.
