Fantastic paring knife - Fantastic knife period!

An excellent paring knife, especially for its price. The weight and balance are exceptional and it's very sharp! Practical and optically well thought out. Overall very impressed and would definitely buy again. Edit: I bought it for off-label use, as a paring knife or carving knife. I like a good paring knife for personal use/food use. Over the past few years I've used a couple of decent paring knives for everything from cold cuts to slicing steaks. The size of a good paring knife is perfect for this, and the control over weight distribution and small size make it ideal for personal use. I've been testing this knife for the last few days and it has exceeded all expectations! It's fantastic to hold and use. The accuracy it delivers is a testament to its overall quality. If it lives up to my ultra-high standards and excels at a job it's not technically designed for, it can definitely make a great paring knife, although I'd recommend trying it simply as a steak knife. I just had a 2 inch thick filet mignon that was cooked to perfect medium rare. This knife cut through him like butter, literally. I love the weight and the feel in hand. Excellent balance. Seriously, for my use it's worth every penny!
