It was a pleasant surprise.

I'm a fan of stainless steel knives, which I sharpen regularly and re-sharpen from time to time. I have never used ceramic knives because of their fragility and high cost. Ceramic knives will break if you drop them on a hard surface because they are made out of "ceramic". And since I occasionally knock a knife off my staging area, I've never considered them a worthy substitute for metal knives. I am happy to say that I was pleasantly surprised by the performance of these knives. Although they looked a bit underwhelming (due to their high price, plastic handle and not very sharp knife point), I quickly realized how accurate they cut. They have tiny prongs on the end of the blade and really cut through butter like a hot knife. I've practiced slicing grapes with my regular serrated metal blades and these ceramic knives and I've definitely noticed a difference. (Note: Of course, I cut my finger for underestimating their sharpness - they DO NOT LOOK sharp, but if you're as messy with your haircut as I was, you'll quickly realize just how sharp they are.. .) really, really good. I think I'll have to buy another one or two of these knives - they're amazing for tomatoes. And although the instructions say you can use them in the top rack of the dishwasher, I take no chances and limit cleaning to hand washing as I don't want to risk the knives clinking too much and breaking or snapping. a knife first (not a set of four) before proceeding with them.
