One scenario is to place the food to be sautéed on a cast iron or carbon steel cookware that has been placed on an induction cooktop and brought to a high temperature (400-500 degrees Fahrenheit). Now, if desired, I can fry the top and bottom of the product at the same time. The CBC heat shield has proven itself as a thermal barrier that protects the surrounding walls from excessive heat.
