For many years I fermented food without proper equipment. Marine style, improvise and customize. What I love most is that I now make sauerkraut and my whole house doesn't stink. My kids would love it if I had gotten it years ago. They always complain when I ferment food how the house stinks. You should look at it daily, you may need to add some water at the top of the lock. But it's a small price to pay for not having a smelly house.
