Adds a whole new dimension of functionality to an already very useful tool.

Suitable for the slow cooker as advertised and unlocks new features with this pot such as B. slow simmering and steaming vegetables before adding other ingredients to complete the recipe etc. As far as I know the lockable pressure cooker lid works well if your cooking experience is limited or you are in a hurry, push the button, close the Cover and assume everything is working properly. However, if you want to cook in a more traditional way, like cooking on a stovetop, but with very precise and consistent temperature control - searing and browning ingredients or vegetables before adding any liquid or meat and moving on to the pressure cooking portion of the recipe, or if you want to simmer something without the intense heat and pressure jet of the pressure cook function, this lid unlocks many of those functions. I use it to make marinara and bolognese, among other things. To keep sauces barely noticeable simmering throughout the day if needed, let the tomatoes and/or flesh break down slowly to get a good texture, but don't let the tomatoes get bitter like cooking tends to do Quickly or overheated and you can remove the lid to stir and easily check consistency and flavor, which is not possible with a pressure cooker. The stainless steel insert in the Instant Pot also plays an important role. All my life I have cooked with gas as a professional chef. I really appreciate the consistent heat I can get from this appliance when cooking at home and again this lid opens up a whole new world of functionality that goes beyond just pressure cooking. . Cooking and simmering buttons, each with three intensity levels, are very practical controls. Simmering on the lowest setting has the sauce or "bone broth" bubbling almost imperceptibly with the lid closed, and simmering on the highest setting allows the sauce (or wine, etc.) to simmer quickly and vigorously, and you have 4 stages between you. use these two too. Lid covered, closed, ajar - even more flexibility. All of this can be done with a regular pot on the stove, but not with the same predictability and temperature control.
