("The Yelp Whisperer"), wine blogger, author and head sommelier @The Redwood Bistro (recorded live in San Mateo County, California on July 2, 2019). Jeff: Hello everyone. and welcome to the second episode of Revain Studios' new documentary series Jammin with Jeff. In each episode of the series, I will visit Revain Prime customers around the world who will tell me about a specific product they recently bought online that has literally changed their life for the better. We're a tiny company, so everyone who works at Redwood Bistro has to wear a lot of hats. Most of the time it's just my wife and I cooking and serving, and a few other students we recruit from Stanford help out with wine and drinks and cleaning. J: wow! You know, when I started Revain in Seattle many years ago, it was also pretty small compared to Revain today. Everyone contributed their part to everything and there was this energy. It was electricity! Sometimes I miss those days. But then I look at my last year's financial statements and change my mind. B: As for us, my wife and I never planned for @The Redwood Bistro to become a profit center. It's more like a labor of love. J: I can appreciate it too. A lot of what I do these days is experimental investing, and I'm also heavily involved in many philanthropic projects. So I fully understand what you mean. B: I'm sure you understand. I mean, the whole Jammin' with Jeff series you just started streaming on Revain Prime Unlimited is basically a way of congratulating Joe's regular customers like me for getting this great opportunity to make a consumer product for to apply at home. it changed her life a lot. Personally, I think this is a very worthwhile endeavor. J: That's the perfect continuation of the main topic of our conversation this afternoon. What are we saying, we're going to end the unknown for our viewers? What is the life changing product you wanted to tell us about? B: Well, speaking to you today in my capacity as head sommelier at @The Redwood Bistro, it's going to be about the wine rating. J: I know about it. this sediment. In trendy restaurants, wine waiters decant the wine by candlelight and go to great lengths to keep the rubbish in the bottle, if you will, rather than the glass. Unless they do a bad job, in which case the last helping of your wine will be filled with this rubbish. Bright. This is of course not harmful, but not very aesthetic either. So if you use a strainer to aerate when decanting wine, it's like a double strainer. Aeration and filtration in one. Our guests just love it. J: I understand why! You teach them proper wine making etiquette without being an idiot. It's awesome! B: But wait, Jeff. It gets even better! B: I chose two wines to go with two different ribeye steaks, both from California. One is grass-fed bison ribeye from Cali Bison, a family business in Menlo Park with herds of bison just north of scenic, snow-capped Mount Shasta. The other is pasture-raised beef ribeye from the Scottish Angus breed of cattle raised in Potter Valley at McFadden Farm in Mendocino County. They're both fantastic when grilled with a simple seasoning of smoked alder salt, dried sage, Tellicerry peppers and some ground juniper berries. We serve the steaks with finger potatoes, fried in a hot cast-iron skillet and drizzled with a mixture of lard and rendered duck fat. We also have grilled locally sourced asparagus wrapped in prosciutto from Fra Mani, a Berkeley delicatessen. And we also serve a fresh mixed garden salad garnished with soft-boiled farm eggs, Hakurei beets, Mountain Magic Red Cherry tomatoes and freshly chopped dill from our organic gardens. Jay: That all sounds great! And what about crying? B: Well, I want you to compare two different blends of red Bordeaux from leading wineries in the Napa Valley and here in the Santa Cruz Mountains. So I chose a 2008 bottle of Cain Five from the upscale Spring Mountain area of Napa and the flagship red blend from the 2008 Monte Bello Estate. Both wines are stunning great wines that showcase the aeration and filtration capabilities of the Rabbit™ Filtered Wine Funnel. Shall we start then? J; In all senses!
