When this knife arrived my wife thought it was too pretty for just cutting meat. She placed it in a lighted Chinese cage :-) However, this idea was quickly abandoned in favor of more practical purposes. Weight and balance are perfect and surpass anything commercially available. It effortlessly cuts heavy beef and pork, but also ripe tomatoes. It's totally professional. Excalibur is the tool by which all other knives are measured. We bet a solid ten!
