I'm still looking for the perfect long arm kettle. It's near. I love the fact that the lid is spring loaded and has enough steam holes so it doesn't pop open when the water boils. I only wish I could find one that held more water. I liked the matte metal over the shiny - it doesn't smudge as much. Ideal temperature for coffee: Boil the water, remove the kettle from the heat and wait until it stops boiling, then pour some over the ground coffee to dissolve it. The air cools the water flow to the ideal temperature. You don't need a thermometer...
