Review on WALLOP Damascus Chefs Knife - 8.5 Inch Japanese Steel Blade With Solar Pattern And Ergonomic G10 Handle For Professional Kitchen Use by Nick Granner

Not Damascus, but good carbon steel

This is not a Damascus knife (folded and hammered layers of metal), so I am docking one star. However, it is a good carbon steel knife. Looking closely at the pictures and researching AUS-8 steel reveal the high-carbon, non-Damascus nature of this knife. Imitation Damascus patterns are formed into the sides of the blade, however, they do help prevent slices from sticking to the blade. The first thing I noticed when unboxing the knife is the weight and balance of the blade. It feels like an expensive knife in my hand, about right for the current price tag. The blade is sharp and feels smoother than my standard kitchen block, and about on par with a true Damascus steel chef's knife that I have owned for a while now. One piece of metal forms the blade all the way down to the heel, and the handle is smooth and firmly in place. There's no doubt that this is a high-quality knife, and certainly reasonable given the price. However, be aware that it is NOT a Damascus knife. Buy this if you are looking for a quality AUS-8 chef's knife. But that's JustMe.
