This mat is very flexible. In use, however, its flexibility means it's difficult to lay flat on whatever surface you intend to use. When you put it down it will curl up and have air bubbles. You need to put an edge in place and then lower it evenly onto the counter so it's level (much like tinted film on a window). Aside from trying to put it on the countertop, I haven't used it, so I don't know how non-stick it is (like wet sticky bread dough). I actually bought two different mats and the other which has a coarser fiberglass mesh embedded in it is less flexible but very easy to apply and lay flat. Both are very stable once laid down (meaning they won't slip or clump together when you press down on the mat like you do when rolling or kneading dough).
